Japchae Korean Glass Noodles with Vegetables

I was inspired by this Japchae recipe by Seonkyoung Longest . I modified it slightly by omitting the beef . Then substituting that for oyster mushrooms and zucchini. These noodles are fantastic as they are chewier and have a bouncy texture. A mild dish that works well as a side or a main.
