Lemon Parsley Spaghetti

Parsley Lemon Pasta

The weather is starting to heat up along the East Coast, so I thought it’s only fitting to embrace the spring vibes with some fresh lemons. I have been watching Get Organized with the Home Edit on Netflix this weekend and it has inspired me to organize all the drawers and cupboards in the kitchen. In this quest I found some forgotten spaghetti, black pepper, and crushed pepper lurking at the back. These would perfectly balance out the citrus notes of the lemon. This is an easy meatless but flavorful lemon parsley pasta that uses a lot of pantry items.

Ingredients:

  • 1 cup Spaghetti
  • ½ lemon
  • 2 tbsp chopped parsley
  • grape tomatoes (chopped)
  • black pepper
  • salt
  • 2 garlic cloves (chopped)
  • 2 tbsp olive oil
  • 1 tsp crushed chili pepper flakes
  • lemon slices (for garnish optional)

Method:

1.Cook pasta and drain

2.Heat up olive oil, crushed chili pepper flakes and garlic. Once the garlic is golden turn off the heat.

3.Add the cooked pasta back in toss with salt and pepper to taste.

4.Squeeze lemon and drizzle with olive oil and mix through.

5.Assemble on a plate garnish parsley and lemon slices (optional).
